Eggplant Salad





Eggplant Salad

Eggplant salad is a Moroccan salad rich in vitamins and original taste. it is also called za'louk. I recall waiting impatiently for my mother to make this salad. In general, It's a very familiar salad in Morocco. Everybody knows how to prepare it, now it's your time.

Ingredients:

2 small zucchini

2 peppers

4 tomatoes

1 pinch pepper

1 tablespoon sweet paprika

4 cloves garlic

1 / 2 ladle of oil

Preparation :

Wash eggplant and zucchini, without peeling. Cut into small pieces. Cook in a casserole with oil, pressed garlic cloves, salt, sweet chili, by covering with water. Blanch the tomatoes, peel, seed and roughly mash. Skip the peppers under the broiler, then peeling, coring and cut into small dice.

When the zucchini and eggplants are tender, add tomatoes and peppers and cook over medium heat, stirring occasionally. Reduce until complete evaporation of water. Add some hot pepper, to taste, and serve this eggplant salad warm or cold.
