Fresh Beans Salad



Fresh beans salad is addictively delicious. One advice though, eat it in moderation because it might fill you up before the main course and it's a bit heavy on the stomach if you have a problem with digestion.

Ingredients :

2 kg of fresh beans

3 cloves garlic

1 / 2 bunch parsley

1 teaspoon ground ginger

1 / 2 teaspoon sweet paprika

2 doses of saffron

1 teaspoon flour

1 / 2 cup mustard oil

1 / 2 teaspoon salt

Lemon rind, olives red for decoration

Preparation :

For this salad I like Scotland beans. Possibly remove the skin covering them. Peel and chop the garlic. In a saucepan, bring to boil the oil, 2 cups water, mustard, ginger, garlic and salt.

Add the beans and let cook for 10 to 15 minutes. Stir in flour mixed with a little water, pepper and chopped parsley 5 minutes before end of cooking. Reduce the sauce and serve the salad warm or cold, depending on your taste.

Enhance the presentation with a few slices of preserved lemon and olives red.

The fresh beans salad is tastier if you make early in the season with the first beans. You can serve as an accompaniment to Tajine Kofta or Couscous Tfaya.
