Fried Lamb with Lemon





Fried lamb and lemon



The fried lamb with lemon is one of those dishes you just must try. In Morocco, this dish is served occasionally and is a warm welcome for guests.

Ingredients:

700g lamb with bones

50 g butter

80 g chopped onions

1 large pinch of ginger

1 large pinch of saffron

1 stick cinnamon

1 large pinch of cumin

2 cloves garlic crushed

4 dl of water around

1 tablespoon chopped parsley

1 tablespoon fresh cilantro

2 candied lemon peel cut

Salt

Preparation :

Cut the meat into pieces of 50 g. In a pan, put the butter to warm. Wait till the meat is brown . Add the onions, crushed garlic. Pour water. Season with salt and cook over low heat 45 to 50 minutes. ¼ hour before the end of cooking, add parsley, coriander and lemon rind (outer skin). The meat should be cooked and the sauce well reduced.
