Rfissa




Surely, this is one of my beloved dishes. It is every household's usual food in Morocco. It started at first when people used to have leftover bread, they used to cut it into pieces and add some sauce and meat on top. Rfissa is an original moroccan dish. Try it, I am sure you would like it.

Here is the recipe for RFISSA or TRIDE

Ingredients:

1 chicken farmer(organic) 2 Kilos

4 large onions

5 tbsp olive oil

2 teaspoon ground ginger

1 packet of Saffron (color) or half the true saffron

1 bunch parsley

1 teaspoon Ras El Hanout

7 seeds sanouj (Nigella seeds well sorted)

1 / 2 teaspoon black pepper Salt

For the TRIDES:

500 g white flour

1 / 2 tbsp baking yeast or 1 / 2 teaspoon baking powder

2 large pinches of salt

1 / 4 L of water slightly warm
