Stuffed Pigeons



Stuffed Pigeons is not really a dish that the majority of moroccans eat a lot. But it is famous in five star restaurants and considered an excellent dish. They really taste good, better than chicken. I dare you to try it.

Ingredients :

10 pigeons plucked and gutted

2 onions chopped

2 tablespoon smen (rancid butter)

1 teaspoon chopped parsley

ginger, cinnamon, pepper

6 sticks cinnamon

1 cup oil

Farce :

1 kg of blanched almonds

1 / 2 glass of water, orange blossom

2 tablespoon sugar

1 packet of vanilla sugar

1 tablespoon smen (rancid butter)

Preparation :

Mix the almonds with 2 sugars, smen, water and orange blossom. Stuff the pigeons. Keep stuffing in place with toothpicks or butcher's twine.

In a casserole, place the pigeons with oil, butter, onions and chopped parsley. Season with 1 teaspoon pepper, 1/2 teaspoon ginger, 1/2 teaspoon ground cinnamon and cinnamon stick. Sprinkle water level. Cover and simmer over low heat for 3 to 4 hours.

Yes, I know stuffed pigeons takes a long time to cook. But, believe me it is worth your time.
