TAJINE LAMB and PEAS
I love me some Tajine lamb and peas. This is a very delicious dish. It is so easy to make, try your cooking skills with this tajine.
Ingredients:
1 kg 1 / 2 lamb cut into pieces
2 kg of artichokes
2 kg of peas (or fresh beans)
1 teaspoon ginger
1 pinch saffron
1 clove garlic
3 tablespoons oil
the rind of a lemon (the thick tough outer skin)
1 handful of olives
juice of one lemon
Preparation :
Pour the oil in the pan, lightly sauté the pieces of meat, add salt and add the ginger and saffron. Toss to permeate the meat, then finish with water and place the lid. Monitor cooking occasionally, add water if necessary. Clean the artichokes and plunge it into the lemon water or vinegar. Cook them in boiling salted water then add sauce to cooking meat.
