The Green Bean Tajine





The green Bean tajine

A marriage of vegetable and lamb, the green bean tajine is a typical Moroccan dish that people eat a lot when the green bean is abundunt and cheap in the spring.

Ingredients

500 g veal shank

500g green beans

2 tomatoes, 1 onion

1 clove garlic

Olive Oil

Saffron, ginger

Salt and pepper

Olive purple peel 1 / 2

lemon rind (outer skin).

Preparation :

Chop the onion and garlic. Cut the peeled and seeded tomatoes into small dice. Put them in a pressure cooker with the meat. Add salt, pepper, saffron, ginger and olive oil. Sauté over medium heat for 5 minutes, stirring and turning the pieces. Cover with water and cook covered 20 or 25 min.

Meanwhile, clean and cut green beans. Then arrange the meat and return to cook covered about 20 minutes. Add olives and lemon rind cut into strips and simmer until the sauce is much reduced.
